balsamic vinegar
Called “Black Gold”, the Traditional Balsamic Vinegar (ABT) is a traditional condiment of Modena’s cuisine, made with cooked musts of grapes which come from the provinces of Modena and Reggio Emilia. They are fermented, acetified and subsequently aged for at least twelve years. Although it has its roots, probably, already in the Roman period, this production was first documented in 1046.
